Roasted Tomato Cream Sauce with Salmon & Penne

Soooo this isn't the quickest but it sure is tasty! I'm obsessed with pasta dishes and salmon so its a no brainer that I had to bring you all this dish. Its light but gives you everything you need out of a pasta dish... and you'll be adding extra sauce because its that good. My son tore this dish up, so I know it's a winner ( because he is pickyyyy)




Here's what you need (I don't do measurements so bare with the kid):


  • Penne pasta

  • Grape or cherry tomatoes

  • Parmesan cheese

  • butter

  • olive oil

  • sea salt

  • cracked pepper

  • 2-4 pieces of salmon

  • minced garlic

  • light cream or heavy whipping cream

  • garlic powder

  • Parsley








Here's how you make it:

  • season your salmon to taste ( I like to use garlic powder, old bay, parsley, onion powder, sea salt & cracked pepper)

  • place seasoned salmon in baking pan, top with thin slices of butter, cover with foil and bake for about 30 mins at 375

  • place tomatoes on a baking sheet lined with foil, drizzle olive oil to prevent sticking and season with sea salt and cracked pepper; roast in oven for about 30-40mins at 375

  • boil pasta water (add salt and olive oil to prevent sticking), once it comes to a boil add pasta and cook until el dente

  • in a large sauce pan, add butter and melt down

  • add minced garlic and stir until aromatic

  • add roasted tomatoes and stir into butter sauce and let simmer

  • add light cream and stir

  • add parmesan cheese

  • season with cracked pepper, sea salt & garlic powder

  • Add your cooked pasta and salmon and stir together

  • top with fresh parsley
